What a project it was to deliver the food, drink and entertainment fit-out at Mollie's Manchester. Working at the historic Granada Studios, we completed Mollie's Diner, the basement Studio IV cocktail bar and live music venue, as well as the ground floor lounge-lobby.
The centrepiece of this project was Mollie's Diner - a 140 cover all-day dining space open from 8am to 10pm. Dark wood panelling, brass finishes and leather banquettes inspired by vintage Cadillacs create a classic American diner atmosphere with a distinctly Manchester edge.
The full length open kitchen sits at the heart of the space, serving everything from breakfast classics to Mollie's signature dishes. Private dining facilities and meeting rooms are also available on the ground floor, alongside a generously sized lounge-lobby combining bar, food-to-go and sociable co-working spaces.
Downstairs, Studio IV is Mollie's basement cocktail bar and live music venue. Designed to celebrate Manchester's music scene and nurture local talent, the space includes a private green room, VIP areas, bar and an outdoor heated terrace.
Medlock’s in-house joinery workshop was central to bringing the vision to life. Working closely with the client and design teams, the joinery specialists designed, manufactured and installed a full suite of bespoke elements including the statement bar itself, decorative wall panelling throughout, waiter stations, screening details and back-bar installations.
Delivering the F&B fit-out as part of a wider scheme, which included the 128 bedroom fit out of Mollie’s Hotel, demanded precise programme management and close coordination across multiple packages.
The completion of Mollie's Manchester is Medlock's largest ever project. It shows what our business is capable of, including the validation of inherited works and delivering a complex, design-led fit-out service on one of the most significant hospitality openings in Manchester.
