Mollie’s Diner and Studio IV Becomes New Food and Culture Destination in Manchester
From early breakfasts to late-night cocktails, Mollie's Manchester brings food, drink and live music together under one historic roof at Granada Studios.
The re-envisioned 1950s landmark on Quay Street now houses Mollie's first city centre hotel, complete with 128 rooms and a fantastic mix of social and dining spaces that breathe new life into this iconic building.
All-day dining at Mollie's Diner
On the ground floor, the 140 cover diner delivers classic American inspiration with a Manchester edge. Dark wood panelling, brass finishes and leather booths set the tone, whilst an open kitchen serves everything from breakfast through to signature dishes - including their famous salt beef sandwich and lobster rolls.
The vintage vibes and comfort food create a welcoming spot whether you're grabbing morning coffee or settling in for an evening meal.
Studio IV: music, cocktails and late nights
Head downstairs and you'll find Studio IV - Mollie's basement cocktail bar and live music venue. This space draws on Granada Studios' legendary entertainment heritage with a lively atmosphere designed for good times.
The bar features private green rooms, VIP areas and an outdoor heated terrace. Live music takes centre stage here, celebrating Manchester's incredible music scene and providing a platform for up-and-coming local artists.
A space for work and socialising
Beyond the diner and bar, Mollie's ground floor incorporates flexible lounge and co-working areas, alongside meeting spaces designed to adapt throughout the day.
Throughout all these spaces, local Manchester-based artists have created bespoke pieces that celebrate the city's musical heritage, sporting achievements and creative spirit. The art collection brings together emerging talent and established names whose work reflects the powerhouse that is the North of England.
Bringing it all together
Refurbishing such an iconic building required a careful balance to retain the character of Granada Studios whilst delivering modern, high-quality spaces.
We worked closely with the client and wider team to deliver the food and beverage areas, as well as Mollie’s hotel, in a way that reflects both the building’s heritage and its future.
The result is a new, dynamic place to eat, drink and socialise in the heart of Manchester.
